Sesame Citrus Asparagus

This recipe comes from a cyper friend from WA. Thanks Deeli~~ with fresh asparagus coming on I wanted to pass it on to all.

1# asparagus

2 TB freshly squeezed lemon juice, plus 1 TB for cooking water

3TB butter

1 TB sesame seeds

Toasted sesame seeds for garnish if desired

3 TB orange juice

2 tea seaame oil

salt to taste

Clean asparagus and break into bite size pieces or leave whole by your choice.

Melt the butter in a medium saucepan. Add sesame seeds and cook, while stirring, over moderate heat, until lightly browned. Add lemon juice, orange juice, and sesame oil.   Whisk to completely blend. Add salt to taste.

Meanwhile, bring enough water that will cover asparagus and 1 TB of the lemon juice to boil in a pot. Add asparagus and cook until just tender, about 2 to 3 minutes.

Add asparagus to the sesame citrus sauce and toss to coat. Serve hot drizzled with a little more of the sauce and garish with toasted sesame seeds if desired.

Asparagus grows wild here in Nebraska. Where one of our sons live they pick it in five gallon buckets. Now doesn’t that make you want to come visit this wonderful, laid back quiet state if for no other reason than to stock up on asparagus?
